There’s something special about a big cup of coffee and a warm, wholesome breakfast on a chilly fall morning. The thought of it has me wanting to stay in my pj’s all day, snuggling up under a blanket (and a kitty or two), and reading magazines on the couch all day. And the breakfast to start that day? This Apple Cranberry Baked Oatmeal.

Today I’m back with my Tastes of the Season blogger friends. Each of us is sharing a seasonal breakfast idea. This collection of recipes is SO GOOD! Be sure to scroll down and check out everyone’s recipe at the end of this post.

If you’ve been following IBC for a couple of years, you might remember another delicious baked oatmeal recipe that I shared: Pumpkin Baked Oatmeal. It has become a go-to for me. I’ve lost track of how many times I’ve made it.

But as much as I love that recipe, I also enjoy mixing things up sometimes. That’s why I put together this new flavor combination. I think I might like it just as much!

The flavor of this Apple Cranberry Baked Oatmeal is just so-o-o good! The sweet apples pair wonderfully with the tart cranberries and crunchy pecans.

I like topping oatmeal with milk and pure maple syrup. And of course, my syrup of choice is Finding Home Farms Maple Syrup. It’s the best. (You can purchase it HERE.)

Now that I’ve tempted you, I suppose you’re wondering how to make it? Let me show you!

How to Make Apple Cranberry Baked Oatmeal:

Begin by preheating the oven to 350 degrees F. Spray a 12 x 8-inch (2.5 quart) baking dish with baking spray. Set aside. (This baking dish set from Staub is my favorite. I’m constantly using it for everything from dips to baked oatmeal!)

Next, in a large bowl, whisk together the milk, heavy cream, eggs, brown sugar, applesauce, melted butter, and vanilla extract until smooth and well combined. (I’ve shared all the ingredient amounts and full recipe instructions in the printable recipe card below.)

Now, in a medium bowl, stir together the old fashioned oats, baking powder, salt, and apple pie spice.

Apple pie spice can be tricky to find in some grocery stores. I purchased mine HERE.

Finally, add the oat mixture to the egg mixture and stir to combine. Fold in the chopped apples, dried cranberries, chopped pecans, and orange zest. Transfer this to the prepared baking pan.

Bake for 45 to 50 minutes or until golden brown. If necessary, cover loosely with aluminum foil to prevent over-browning.

As I mentioned above, I like to serve this dish with a splash of milk and a drizzle of pure maple syrup for the ultimate start to my day.
