This year I will be spending Valentine’s Day all alone…well, not totally alone. I plan on hanging out with a bottle of wine and some kind of sugary box of chocolates I pick out for myself. I will also probably watch Sweet Home Alabama about 3 times (while reciting all the lines back at the screen…with a heavier accent for each glass of wine I drink) and then fall asleep on the couch around 9pm.

If you are thinking of putting me on suicide watch, please don’t worry — I am actually looking forward to my plans. Sweet Home Alabama is one of my favorite all time movies, wine is awesome, and chocolate is pretty much wine’s best friend. It’s going to be an awesome Valentine’s Day.

Jorge will be out of town for work that week, so I figured what better way to celebrate? But I really am sad that we won’t get to do ourtraditionalV-day stealth Target shopping triptogether. Maybe we can do it on Friday when he gets back…and hey, then everything will be 75% off! Yay, for more candy!

You all know that while Jorge and I don’t celebrate V-day in the traditional way, I do love sweet treats that are V-day inspired.

So for this Valentine’s Day, I didn’t want to disappoint you guys and not provide something overly sweet. Because let’s be honest, Valentine’s Day is the first time since Christmas that it is perfectly acceptable (and expected) for us to pig out on Sugar. Thank god for the holidays! ;)

These little darlings take a few steps to make, but really are not difficult. Plus, if you have kids, I am sure they would have a blast getting to crumble up the cake and sprinkle on the little hearts!

These little bites of heaven are made from red velvet cake and cream cheese icing rolled together and then dipped in white chocolate. Perfect gift for Valentine's, Mother's Day or a wedding shower. Just decorate according to your theme.

Chill Time1 hour hour 30 minutes minutes

Total Time2 hours hours 33 minutes minutes

    Ingredients

    Red Velvet Cake

    • 1 ¼ cups all-purpose flour
    • ¾ cup Dixie Crystals Extra Fine Granulated Sugar
    • ½ teaspoon baking soda
    • 2 teaspoons cocoa powder
    • ½ teaspoon salt
    • 1 large egg
    • ¾ cup vegetable oil
    • ½ cup buttermilk
    • 1 tablespoon red food coloring
    • ½ teaspoon vanilla extract
    • ½ teaspoon white distilled vinegar

    Cream Cheese Frosting

    Truffle Finish

    • 1 package (16 oz) bakers white chocolate
    • sprinkles, optional

    Instructions

    • Preheat oven to 350°F. Grease a 9 X 13-inch cake pan.

    • Sift together flour, sugar, baking soda, cocoa powder and salt into a medium bowl.

    • Beat egg, vegetable oil, buttermilk, food coloring, vanilla, and vinegar in a large bowl until well combined. Add dry ingredients and stir until smooth.

    • Pour batter into prepared cake pan. Bake until a toothpick inserted in center comes out clean, about 18 to 20 minutes. Transfer to a wire racks and let cool completely.

    • Prepare cream cheese frosting. Using a rubber spatula combine soft cream cheese with powdered sugar. Avoid mixing vigorously as it will make frosting runny. Add softened butter followed by vanilla.

    • In a large bowl, use your hands to crumble cake into small crumbs. Spoon 1/2 cup cream cheese frosting into bowl and stir until mixture is well-combined.

    • Using 1 tablespoon of dough, roll dough between your palms until round like a ball. Place on a baking sheet covered with parchment paper, and refrigerate for 1 hour.

    • Place bakers white chocolate in a microwave-safe bowl and microwave it until melted, stirring every 45 seconds to prevent overheating.

    • Using a fork, submerge a cake ball in the melted candy coating. Replace dipped truffle on baking sheet covered with parchment paper. If desired, top each truffle with sprinkles. Repeat with remaining cake balls.

    • Refrigerate truffles to set coating, about 15 minutes. Truffles are best served at room temperature, but must be stored in refrigerator in an airtight container.

    FAQs

How do you firm up a truffle mixture? ›

If the mixture is getting too soft, put it in the fridge or freezer and let it firm up before continuing.

What if ganache is too hard for truffles? ›

But, if for some reason you've made your ganache too thick, because you've added too much chocolate or not enough cream or a liquid, first of all, warm up your chocolate ganache to loosen up the texture and then add cream or the other liquid of your choice.

How do you harden chocolate truffles? ›

Chill the truffles briefly, for about 15 minutes, while you prepare whatever you'd like to roll or enrobe them in. If your ganache isn't firm enough to scoop into balls, you can chill it in the fridge to harden.

What is a substitute for heavy cream in truffles? ›

Full-fat coconut milk or a blend of coconut milk and coconut cream are an ideal substitute for heavy cream. The truffles in this photo are made from canned coconut milk; I recommend choosing a brand that is in a container that doesn't contain BPA.

How long do homemade truffles last? ›

Homemade truffles can last up to 2 weeks in the refrigerator and for up to 6 months in the freezer. For the best texture and flavor, bring them to room temperature before serving. Even if you're planning on gifting your chocolate truffles, be sure to store them in the fridge or freezer.

    What enhances truffle flavor? ›

The fruity, slightly bitter taste of olives and olive oil beautifully complements the umami-rich flavor of truffles. Drizzle truffle-infused olive oil over an olive tapenade for an extra depth of flavor.

What kind of chocolate is best for truffles? ›

Semi-sweet or dark chocolate make a very intense chocolate truffle and milk chocolate yields a sweeter truffle. If using milk chocolate, reduce the cream to 1/2 cup as milk chocolate is much softer than dark chocolate.

How do you thicken ganache for truffles? ›

Another way to fix your runny ganache is by cooling your ganache down first before using it. It is very easy to do, all you have to do is wrap the ganache with plastic wrap and store it in the fridge, at least for an hour. After that, you can mix the ganache again with a mixer to thicken the texture.

Why did my chocolate truffle mixture separated? ›

Try adding the heated cream to the chocolate away from the heat. Curdling often occurs when you add too much heat to the chocolate as it's the fats and cocoa solids in the chocolate separating that causes the issues.

What is the easiest way to coat truffles in chocolate? ›

Carefully lower each truffle into the bowl of melted, tempered chocolate. Make sure it's fully coated, then gently shake off the excess chocolate. This is where your dipping tool comes in handy. Once done, place the truffle onto the lined tray.

Why haven't my truffles set? ›

If your truffles aren't set up, chances are you haven't given the ganache enough time to solidify. Place the ganache in the fridge for a while.

How do you candy coat truffles? ›

Once you've rolled the chocolate truffles into balls, simply drop the balls into your desired coatings, gently pressing to cover completely.
